This salad is a good source of vitamins C, B2, B6, B12 and calcium and provides 2 servings of your 5 a day.
250g cherry tomatoes
1 orange pepper
2 ripe avocados
75g rocket leaves
2 balls (125g) mozzarella
1 bunch basil, torn into pieces
For the dressing:
2tbsp olive oil
½ lemon, juice only
½ tsp runny honey
Cut the tomatoes in half. Cut pepper in half, remove seeds and roughly chop. Place the rocket onto a large platter and place the tomatoes and peppers on top. Cut the avocado in half, remove the stone and scoop out the flesh. Place onto the salad. Drain the mozzarella and pull into small pieces and arrange on top of the salad. Top with torn basil leaves.
For the dressing place all the ingredients into a small jug and using a whisk mix it together. Season. Pour dressing over the salad and serve.
