Cucumber and Dill Salad with Salmon

Ingredients
1/2 cucumber, quartered lengthways
1 (160g) pack hot smoked salmon, flaked
1 (120g) bag baby salad leaves with watercress
FOR THE DRESSING
1 tbsp sunflower oil
zest and juice 1/2 lemon
2 tbsp chopped fresh dill
Method
- Use a potato peeler to pare ribbons from the cucumber then place them in a small bowl. Add the salmon. Whisk all the dressing ingredients together and toss in the cucumber and salmon.
- Divide the salad leaves between two bowls then heap the cucumber and salmon leaves in the centre. Serve straight away with crusty bread.
