Cucumber and Dill Salad with Salmon

Ingredients

1/2 cucumber, quartered lengthways
1 (160g) pack hot smoked salmon, flaked
1 (120g) bag baby salad leaves with watercress

FOR THE DRESSING
1 tbsp sunflower oil
zest and juice 1/2 lemon
2 tbsp chopped fresh dill

Method

  1. Use a potato peeler to pare ribbons from the cucumber then place them in a small bowl. Add the salmon. Whisk all the dressing ingredients together and toss in the cucumber and salmon.
  2. Divide the salad leaves between two bowls then heap the cucumber and salmon leaves in the centre. Serve straight away with crusty bread.
