Avocado & Smoked Salmon Salad

Ingredients

1 small head of ruby little gem lettuce, trimmed and washed

a handful of watercress, washed

1 avocado, peeled and thinly sliced

50g/2oz smoked salmon preferably organic

zest and juice of 1 lime

1 tbsp sunflower oil

a pinch of sugar

salt and freshly ground black pepper

Method

  1. Break the lettuce into leaves and arrange on a plate with the watercress, avocado and salmon. Scatter over the lime zest.
  2. In a small bowl, whisk together the lime juice, oil, sugar and salt and pepper. Drizzle this over the salad and serve.
